Raw Wild Blueberry Pie


I recently purchased the book "Life-Changing Foods" by Anthony Williams and it really is life changing. If you haven't heard of him but believe food really is thy medicine, then you should check him out here .  All the information in the post is taken from his book.

So anyways, back to this book! Besides having really interesting information (you probably won't find anywhere else) on all the healing foods, it has a bunch of really easy, healthy recipes. The first one I tried was this raw wild blueberry pie, which was delicious. I loved it, Addison loved it and so did my mom. And it's RAW so there's no baking involved.

Before getting into the recipe, I'll share a bit of info about wild blueberries.

  • First, wild blueberries and the regular blueberries you find in the produce area are NOT the same. Its like comparing farmed salmon and wild salmon. (You can find wild blueberries in the frozen aisle)
  • Wild blueberries remove heavy metals and radiation from the body
  • When you eat berries their innate intelligence reads your body, searches out potential disease and figures out the best way to heal you (how amazing is that?)
  • Besides being full of antioxidants, blueberries are a potent prebiotic and also restore the liver
That's just a bit of information on how wild blueberries are one of the most important healing foods. What I found really interesting is these wild blueberries can survive anything. These plants can be burned to the ground and they will come back stronger than ever. They really are a super food.

Ok, so onto the recipe!




Ingredients:

1/3 cup cashews
1/3 cup unsweetened shredded coconut
4 cups pitted dates
20 ounces frozen wild blueberries, thawed
1 mango, diced ( i used frozen)



For the crust; process cashews, coconut and 3 cups of dates in a food processor until thoroughly combined and smooth. Press the crust into a 9 inch pie dish. Cover and refrigerate.

For the filling; process half of the wild blueberries, the remaining dates and the mango in a food processor until smooth. Stir in the other half of the blueberries (I just put them on top)
Pour the filling into the pie crust and set in the fridge for at least 40 minutes.

That's it!

So easy! And so yummy!
